Ingredients

½ Kg – Lamb or Mutton pieces
1 tsp – Butter
2 tbsp – Oil
2 – Bay leaf
3 – Cardamom
6 – Cloves
2 tsp – Ginger Garlic Paste
4 – Garlic Cloves
1 tsp – Black pepper corn
2 tsp - Cumin Seeds
½ tsp – Turmeric Powder
1 Tbsp – Coriander Powder
½ Tsp – Chilly Powder
½ Tsp – Cumin Powder
1 – Large onion cut into small pieces
10 – Curry Leaves
Small Bunch-Coriander Leaves
4 – Green Chilies
¼ piece – Lemon
Salt – To taste

Cooking Method

1. Cut 1/2 kg of mutton in to pieces.

2. Add 2 table spoon of coil and a cooker or a pan.

3. When the oil is hot add bay leaves, cardamom,
cinnamon stick and cloves.

4. Add 1 teaspoon of cumin seeds and wait till it crackles.

5. Now add the chopped onion.

6. When onion turns into slight golden brown.
Add ½ teaspoon of turmeric powder.

7. Add 2 teaspoon of ginger garlic paste.

8. Sauté till the raw smell of ginger garlic is over.

9. Now add the cut mutton or lamb pieces and
sauté for 2 minutes.

10. Add 250 ml of water, salt and pressure cook for
10 minutes.

11. Now the mutton should be 90% cooked.

12. Grind 4 garlic cloves, 1 tsp of black pepper corn
and 1 tsp of cumin seeds into a coarse paste.

13. Now add butter in a hot big pan.

14. When the butter melts and oily add the ground garlic,
pepper and cumin seeds paste.

15. Sauté for 5 seconds.

15. Add cut pieces of green chilly (increase or decrease
chilli according to your need).

16. Add the curry leaves.

17. Now add chilly powder, coriander powder and cumin powder.

18. Add cooked meat and its gravy.

19. Heat in medium flame for 10 minutes.

20. Add coriander leaves and heat it for few more minutes
so that the oil separates.

21. Squeeze quarter lemon and you are done.

22. Best to eat with rice, chappathi, idli, dosai
and idiyappam.
